What is a really great dish made of, and what keeps a really good dish genuine? Naturally, it’s using the best ingredients, but also the mutual friendships that serve to enhance one another, such as the tomato for instance. Everyone one knows it gets on wonderfully well with mozzarella, basil and olive oil, and has done for as long as we care to remember. And yet there are numerous ingredients and preparations that we wouldn’t realise share an equally great rapport. Dutch Cuisine ambassador Angelique Schmeinck has outlined all of these relationships in this new edition of Smaakvrienden through culinary mind maps, with the most popular vegetables and fruit as a starting point.
